Beguni Recipe | Crispy Eggplant Fritters Recipe | Batter Fried Brinjal | Bengali Baingan Pakora

As a Bengali, how many of you don't like to have Beguni with muri in the evening? Personally I don't like muri or murmura, but I can't stop myself when I see mouthwatering crispy beguni frying on the streets of Kolkata, specially in the evening.

If you have been to Kolkata ever, you might have noticed that Beguni is one of the typical best evening snack recipe besides aloo chop, peyaji / piyaji. But, having such foods from outside may cause stomach problem sometimes. In that case it's always recommend to try Bengali begun recipe at home only.

In this post, I will be sharing the easy beguni recipe which will hardly take few minutes to prepare, the fun of having the same with evening tea at home is simply awesome. Ingredients For Preparing Bengali Beguni Recipe

  • 1 brinjal, preferably we call them Tal Begun which look fatty in size & long
  • Salt to taste
  • 1 tbsp sugar
  • 1 cup flour + 1 Cup besan flour
  • A pinch of turmeric powder
  • A pinch of hing (aesofetida)
  • 1 tbsp chaat masala / Maggi Magic Masala [Just try it once]
  • 1/2 tbsp banking powder
  • Enough oil for deep frying

How do you make eggplant fritters?

  • First of all you have to cut the brinjal in thin slices. You can refer to the picture.
  • Wash them properly and let them dry for a while so that the water can be drained out.
  • Now in a deep pan, put enough oil and let it heat properly.
  • Now mix all the ingredients in separate bowl and make a think batter. Check the consistency and if require put more flour make sure it is thick enough to stick around the brinjal slices.
  • Are you read to fry eggplants? Let's check out the oil by putitng a small drop of batter. If you think its enough heated up, then ready to put the brinjal slices there.
  • One by one, put the slices into the batter and make sure every side is covered and then put into the hot oil. Make sure the pan is large enough if you want to put more brinjal slices, otherwise fry 2-3 at a time giving enough space to fry properly.
  • Checkout the Beguni color, it will gradually change into red hot and that's the time when you have to take them out of the oil and drain into some oil soaking paper.
  • Serve them hot & crispy.
